Hippocrates is said to have called olive oil, “the great healer,” and Homer purportedly deemed it, “liquid gold.” I call it, a delicious treasure. I am a true believer that you shouldn’t settle for less than Cold-Pressed Extra Virgin. This is the gold standard for olive oil, for both health benefits and taste. Among all the grades of olive oil, extra virgin is known for having the greatest amount of polyphenol compounds because it undergoes the least amount of processing. To be labeled “extra virgin,” olive oil must meet purity specifications that only the freshest and healthiest fruit can deliver. California is my go-to source for this high-quality olive oil, which has been certified 100 percent extra virgin by the California Olive Oil Council (COOC).
What I love most about the flavor: this olive oil has a hint of citrus with a slightly peppery finish.
