I’m not a big proponent of sugary desserts, and generally advise that sweets be eaten in strict moderation. Even so, a sweet tooth will strike from time to time for us all, and I do believe that there are ways to indulge without throwing all caution to the wind. There is a middle ground where you can make a delicious treat, with high quality, wholesome ingredients, and even pack in some fiber, vitamins, minerals, healthy fats, protein, and more!
These cookies are wonderful example of doing just that. Hearty, rich and satisfying, these healthy chocolate chip cookies are made with coconut oil, flax seeds, nut butter, oats, and raw honey. Free of refined sugar and flour, trans fats, and other highly processed ingredients, these gluten-free goodies are much higher in protein, fiber and healthy fat than traditional chocolate cookies. They’re even great for breakfast!
*Choose organic items whenever possible
Healthy Chocolate Chip Cookies Recipe
1 cup rolled oats
1 cup flax seeds
1 large egg
1 Tbsp coconut oil
1 cup almond or peanut butter
1/4 to 1/3 cup honey
1 tsp baking soda
1/3 to 1/2 cup of dark chocolate (at least 70% cacao), broken into very small pieces
Optional: 1/2 cup unsweetened shredded coconut or pumpkin seeds
Preheat oven to 350 degrees F. Combine all ingredients in a bowl, then mold into 2-inch cookie discs and bake for 14-16 min.
