Easy Spaghetti Squash Parmesan

We’re always looking for new ways to enjoy our products, and when Greg and Jen DeMarco of Connecticut shared with us this Spaghetti Squash Parmesan recipe made with Vervana Organic Marinara Sauce, we got excited to make it ourselves…Because not only is it healthy, but simple-to-make and delicious! It quickly became a family favorite and may just become one of your favorites too! Serves 2.

Spaghetti Squash Parm Ingredients

*VEGETARIAN RECIPE* (Vegan variation below)

To make:

Preheat oven to 400 degrees F. Slice the spaghetti squash in half, scoop out seeds and discard. You can steam or bake the spaghetti squash…

To steam, pour 1 cup of filtered water in a roasting pan then place the spaghetti squash halves face down and roast them for about 30 minutes – until the squash reaches desired consistency, test with a fork. The seeds may be easier to scoop out and discard after the spaghetti squash steams.

To bake, coat each cut side of the spaghetti squash with olive oil, then place them face down on a baking sheet (we like to use parchment paper between the sheet and the squash. Bake the squash for 25-30 min, or until it reaches desired consistency.

After the squash is steamed or baked, remove it from the oven and fluff the squash into “spaghetti” with a fork. You can make the Squash Parm right inside the squash shells or scoop the “spaghetti” out into an oven-safe dish. Either way, spread desired amount of Organic Marinara Sauce over the squash and top with grated mozzarella and shaved or grated Parmesan cheeses. Bake at 375 degrees F oven until cheeses are melted. Season with Salt Blend and Pepper & Juniper Blend, to taste. Mangiare!

Vegan Variation

Prepare and bake / steam the spaghetti squash per directions above, and fluff the “spaghetti” in the shells with a fork or scoop out into a bowl. Heat desired amount of Organic Marinara Sauce on the stove until hot, then spoon over the squash “spaghetti.” Finish with a generous drizzle of EVOO or flavored olive oil, then season with salt and pepper, to taste. For added zest and hot chili kick, sprinkle with Italian Seasoning & Dipping Blend.
